Description

In thisworkweconsidertwoclassicalmathematicalmodelsofwine fermentation.Thefirstmodeldescribesthewine-makingprocessthatisused to producedrywine.Thesecondmodelisobtainedbyintroducingatermin the equationofthedynamicsoftheyeast.Thankstothischangeitwillbe possibletoinhibitthefermentationofthesugarandasaconsequenceasweet wine willbeobtained.Wefirstprovetheexistence,uniqueness,positiveness and boundednessofsolutionsforbothmodels.Thenwepasstoanalysethe the long-timedynamics.Forthesecondmodelwealsoprovideestimatesfor the concentrationofethanol,nitrogenandsugarattheendoftheprocess. Moreover,severalnumericalsimulationsareprovidedtosupportthetheoretical results.
