Una investigación cualitativa sobre el turismo gastronómico en Extremadura
Description
El turismo gastronómico se considera una tipología emergente en los mercados turísticos
actuales. La cuota de viajeros sensibles a los patrimonios alimentarios locales y a las
producciones tradicionales se encuentra en una etapa de crecimiento. Se trata de un segmento
caracterizado por consumidores preparados y expertos que conciben la experiencia
gastronómica como un acto cultural. Reconociendo el importante potencial de desarrollo que
tiene la gastronomía extremeña, se propone en este artículo un estudio cualitativo, realizado con
entrevistas personales en profundidad dirigidas a un panel de informadores compuesto por:
profesionales y expertos, cocineros y restauradores, responsables de entidades de gestión
turística públicas y privadas. Su finalidad principal ha sido alcanzar un conocimiento exhaustivo
del sector enogastronómico de la región, a partir de las opiniones de los expertos y los
profesionales que operan en ello.
Abstract
Gastronomic tourism is considered an emerging typology in the actual tourism market. The share of travellers who are sensitive to culinary heritage and traditional products is in a growth stage. This is a particularly segment made of consumers differentiated by being prepared and experts and by considering the dining experience as a cultural event. Recognizing the significant potential development of the same for the region of Extremadura, we propose in this paper a qualitative study, with in-depth interviews conducted with a panel of informers chosen to fit the specific objective of the paper. They were professionals and experts, chefs and restaurateurs, managers of public and private entities. The main purpose of the article is to achieve a deep understanding of the food and wine industry in the region, based on the opinions of experts and professionals working in it.Additional details
