Effect of the application time of shear stress on cell activity

Description

To investigate the effect of shear stress on alcoholic fermentation, a series of batch runs has been carried out at a constant rotation speed of the impeller (5 s-1) and using the same inoculum of fresh Saccharomyces cerevisiae cells, previously stressed in an isotonic solution without substrate for different application times 0-20 h).
