Constituyentes característicos de los vinagres vínicos andaluces

Se ha llevado a cabo un estudio so­bre algunos componentes caracterís­ticos de vinagres vínicos de origen andaluz. Para ello se han tomado 16 muestras, en las que se ha determi­nado la presencia de ácido tartárico, prolina y componentes volátiles. Se ha hallado un alto grado de concen­tración de los componentes estudia­dos, especialmente en los vinagres de Jerez envejecidos.

Abstract

A study about sorne characteristic components of wine vinegars from Andalusia has been carried out. Tartaric acid, proline and volatile compounds have been determined in sixteen samples of andalusian wine vinegars. High concentrations for the components studied have been found, especially for the samples of Jerez aged vinegars.
